Cinnamon Dessert Taco with Fruit Salsa
Yield: Makes 6 servings
Ingredients:
1
cup sliced fresh strawberries
1
cup cubed fresh pineapple
1
cup cubed peeled kiwi
1/2
teaspoon minced jalapeño pepper* (optional)
2
packets sugar substitute or equivalent of 4 teaspoons sugar (optional)
3
tablespoons sugar
1
tablespoon ground cinnamon
6
(8-inch) flour tortillas
Nonstick cooking spray
Preparation:

Stir together strawberries, pineapple, kiwi, jalapeño pepper and sugar substitute in large bowl; set aside. Combine sugar and cinnamon in small bowl; set aside.

Spray tortilla lightly on both sides with cooking spray. Heat over medium heat in nonstick skillet until slightly puffed and golden brown. Remove from heat; immediately dust both sides with cinnamon-sugar mixture. Shake excess cinnamon-sugar back into small bowl. Repeat cooking and dusting process until all tortillas are warmed.

Fold tortillas in half and fill with fruit mixture. Serve immediately.
