Country Kielbasa and Vegetables
Yield: Makes 4 servings
If you crave pasta and sausage, look no further. The slow-cooked flavors and heated dose of hot pepper sauce in this home-style dish will hit the spot!
Ingredients:
Nonstick cooking spray
8
ounces turkey kielbasa sausage, cut into 1/8-inch rounds
1
cup chopped onion
3/4
cup chopped green bell pepper
1/2
cup finely chopped celery
1
can (16 ounces) diced tomatoes, undrained
1/2
cup uncooked orzo pasta
1/3
cup water
1/2
teaspoon dried thyme leaves
2
teaspoons olive oil
Hot pepper sauce
Preparation:

Preheat oven to 350°F. Spray large nonstick skillet with cooking spray. Heat over high heat until hot. Add sausage; cook and stir 10 to 15 minutes or until sausage is brown. Add onion, pepper and celery; cook an additional 3 minutes.

Spoon into 1-1/2-quart casserole. Add tomatoes, orzo, water and thyme; cover. Bake 1 hour, stirring after 30 minutes, or until heated through. Add olive oil; stir to combine. Let stand, covered, 10 minutes before serving. Serve with hot pepper sauce.
